
There's something truly special about the aroma of freshly baked bread filling your home, don't you agree?
Store shelves are lined with bread in many forms, yet many of us feel worse after eating it, bloated, foggy, or sluggish. The problem isn’t that bread is bad for us; it’s how modern bread is made.
Modern farming practices have radically altered the wheat that God created for human health.
The grain has been modified for quick growth and insect resistance, and is coated with pesticides. Then, at the factory, the flour is highly refined (because white bread is more appealing to customers than brown bread), quick-rise yeast and preservatives are added (for a long shelf life).
Artificial nutrients are added to replace those removed during the process of making white bread. To enhance the taste, refined or artificial sugars are included, making it addictive and resulting in loaves that are fast and fluffy, yet hard on the digestive system.
Studies now show that our modern bread destroys intestinal linings, and the modified gluten content isn’t digestible.
Well, anytime man tries to alter what God has perfected, it creates a disaster. Modern bread isn’t even close to the high-quality, nutrient-dense bread in Genesis.
“In the sweat of thy face shalt thou eat bread, till thou return unto the ground;...” Genesis 3:19
What is Einkorn?
The ancient wheat mentioned in the Bible (not to be confused with whole wheat) is called einkorn. Einkorn is the most ancient form of cultivated wheat. It has a simpler genetic structure designed for human consumption, and is naturally rich in protein, lutein, and minerals. Einkorn has a higher fiber content compared to modern wheat, which can aid in digestion, promote a healthy gut, and prevent weight gain.
Einkorn is rich in antioxidants such as carotenoids, which can help reduce inflammation and protect against chronic diseases. The slower digestion of Einkorn due to its nutrient density helps maintain more stable blood sugar levels and delays the onset of diabetes. It is not gluten-free, but its gluten contains 14 chromosomes, making it feel more tolerable than the 42 chromosomes in modern bread gluten.

Sourdough is all the rage right now and uses a living culture of wild yeast and lactic-acid bacteria. During a long rise, that culture:
- Pre-digests parts of the gluten network, making the final bread easier on some stomachs.
- Unlocks minerals like iron and zinc by reducing phytic acid.
- Creates flavor and texture that commercial yeast cannot match.
- Keeps bread fresh longer without additives.
Together, Einkorn and sourdough pair beautifully.
Getting started is simpler than it sounds. It only takes four ingredients:
1) Choose your flour: All-purpose Einkorn for a more traditional taste. Whole-grain Einkorn has a nuttier, grain flavor.
2) Starter leaven
3) Spring Water
4) Celtic Sea Salt

Scripture and Stewardship at Your Table
Bread appears throughout Scripture not as a guilty pleasure but as a necessity for health. Jesus taught us to pray for “daily bread” and referred to Himself as the Bread of Life (John 6:35). When wholesome bread returns to our tables, it restores more than nutrition. It restores fellowship, conversation, gratitude, laughter, and blessing.
Health stewardship isn’t deprivation; it is wisdom using what God has given. The value is in the quality of the wheat. Remember, food is medicine, and what you eat either heals the body or creates disease. A long-fermented bread satisfies more; you often eat less and feel better.
